You don't ever have to use bindings if you don't choose too. There is no achievement tied to bindings iirc. If you do choose to having bindings you can choose to do any number of bindings at a time. Most of the endgame takes place in a dream world though, so you should be fine. If you complete the ritual she stays until you have completed the charms. Banish them and she leave immediately. Im currently working on nightmare king grimm. my dilemma is this: I like the idea of carefree melody more than i like the idea of a simply stronger grimmchild. My understanding is that if you choose to fight nightmare king grimm you get the grimmchild and if you choose to banish the troupe then you get carefree melody.
