Sure but it is a super simple build. Go first five or six as monk and take tavern brawler feat focus all stats on wisdom for AC, follow with Dex for AC, dump strength and get potions. Grab three levels of rogue/thief for second bonus action and finishing up with all monk levels. Increase dex with gear and buffs.
