I believe the villagers need two full blocks open above their bed to sleep properly.One reason the golems may not be dropping iron ingots is because you have to kill them yourself, kind of like XP, if you don't kill the mob, it wont drop XP. In this case, it's iron. Mojang probably did this to slow down or stop automatic iron farms. I have created three different iron farm designs in an attempt to have one work on my server. The problem must be related to the server somehow because the farms did work when tested on singleplayer. For villagers to sleep the beds need to be in a room that is 3 blocks tall, iirc. They need to be able to stand on the beds and not take damage for it to be valid. If there's a zombie, line of sight needs to be interrupted for villagers to sleep.
